Yummy Mince Pie Filling!

Mince Pie Filling:

We ran out of mince pies! No matter! Well, whip up our own!

Usually, the fruit would have to soak for a day + in brandy/liqueur. But cooking the fruits until soft speeds things up a bit.

2 cups chopped dried apricots

2 cups raisins

1 cup dried cranberries

2 medium apples cored, peeled & chopped

1 lemon zest & juiced

1 orange zest & juiced

1/2 cup soft brown sugar

1tsp ground Cinnamon

1tsp ground Ginger

1.5 tsp Nutmeg

Boil for 20 minutes until soft.

Add 1/2 cup mixed peel

Crystallised ginger

Brandy/orange liqueur

Jar up. Can be water bathed for 10 minutes to store in pantry. But this batch is heading straight into mince pies. So will wait it out in the fridge.
