A delicious and easy to make cookie snack.
What you need:
2 tsp Baking Powder
80g Castor Sugar
1 large Egg
1 Tbsp Milk
What you do:
Mix flour, baking powder & sugar.
Cut butter into blocks and rub into flour mixture until it looks like wet sand.
Beat egg & milk together.
Create a hollow in the flour mixture & pour milk egg mixture into the hollow.
Mix using a fork until it makes a soft dough. Not sticky or crumbly. If it’s too sticky, carefully add a little extra flour. If too crumbly, add a tiny amount of milk.
Scoop tablespoons of the dough and roll into balls between your hands.
Place on Baking Sheet covered with baking Parchment.
Press thumbprints into the center to create a pool for the jam.
Scoop small amounts of jam into the thumb prints ion the cookies.
Apricot, Raspberry & Strawberry Jams are all lovely for these Cookies.
Bake in hot oven until lightly brown.
Remove and cool on cooling rack. Careful, the jam will be very hot!
