Thumbprint Cookies!

A delicious and easy to make cookie snack.

What you need:

225g Flour

2 tsp Baking Powder

80g Castor Sugar

110g Butter

1 large Egg

1 Tbsp Milk


What you do:

  • Mix flour, baking powder & sugar.

  • Cut butter into blocks and rub into flour mixture until it looks like wet sand.

  • Beat egg & milk together.

  • Create a hollow in the flour mixture & pour milk egg mixture into the hollow.

  • Mix using a fork until it makes a soft dough. Not sticky or crumbly. If it’s too sticky, carefully add a little extra flour. If too crumbly, add a tiny amount of milk.

  • Scoop tablespoons of the dough and roll into balls between your hands.

  • Place on Baking Sheet covered with baking Parchment.

  • Press thumbprints into the center to create a pool for the jam.

  • Scoop small amounts of jam into the thumb prints ion the cookies.

  • Apricot, Raspberry & Strawberry Jams are all lovely for these Cookies.

  • Bake in hot oven until lightly brown.

  • Remove and cool on cooling rack. Careful, the jam will be very hot!
