SOUR DOUGH BREAD

What you need:
½ cup Sour Dough Starter
1 1.4 cup lukewarm Water
3 cups Flour – we use Unbleached Organic.
1.5 tsp Himalayan Salt
Combine the starter & water in a large bowl and mix.
Stir in flour & Salt using a fork to combine everything.
Do not overmix. Just loosely combine all the elements. Then leave it covered in the bowl to rest for a little while.
Turn the dough out onto a floured surface and fold sides into a round smooth ball.
Put back into the bowl and cover with tea towel. Leave to rise for 8 hours/overnight.
Turn onto floured surface. I carefully scrape the dough from the bowl with a pastry tool to keep as much air as possible in the batter. And fold again like before. Shape into a round ball and place in flour dusted leavening basket or bowl. Leave for another few hours until doubled in size.

We bake ours in our Dutch oven. It helps to turn the dough out onto baking parchment and use this to lower it into the pot. Placing a lid on the Dutch oven for the first half of the baking.
Bake in hot oven for 25 minutes, then remove lid and return for another 25 minutes.
Leave to cool a bit. It’s scrumptious with home-made Marmalade or Strawberry jam.
