PEA & MINT SOUP

A delicious Pea and Mint soup, simply Home Grown!


What you Need:

  • Large Onion

  • 2 Potatoes – we don’t usually peel ours. It does make a more rustic soup base.

  • Butter & Olive Oil

  • Organic Stock/Broth – we usually use Chicken.

  • 1 ½ cup of Frozen Petit Pois

  • Handful of fresh Mint – no stems.

  • Seasoning

  • Crème Fresh


What you do:

Dice Onion & Potatoes into small cubes and fry them on a medium heat in the Butter & Olive Oil in a pot. They just need to be softened not browned.

Add the stock/broth liquid to the pot and put on a soft boil for about 20 minutes until potatoes are completely soft.


Add the frozen peas, mix and cook for 2 minutes. To keep the beautiful fresh green, we almost just thaw them. Add the fresh mint and liquidize. Add seasoning to taste.

Serve up with garlic buttered toast & a good dollop of Crème Fresh.
