For the Gingerbread House:

900g Flour

1 tbsp Baking Powder

3 tsp Ground Ginger

1 tsp Ground Cinnamon

300g Dark Brown Sugar

375g Butter

150g Golden Syrup

1 Egg

3 tbsp Water

375g butter

For the Icing (glue)

3 Egg Whites

675g Icing sugar

1 tbsp Lemon Juice

Preheat your oven and line your trays!

Mix all dry ingredients in a large bowl. Rub in the butter and then add in the wet ingredients.


When the mixture is thoroughly mixed into a firm dough, roll the dough out and cut into pieces using our downloadable template to get all the walls and the roof.

Bake your gingerbread walls for 15 minutes or until they are a delicious golden brown. Let them cool down completely before sticking together.

When the walls have cooled down, start making the icing.


Whisk the egg whites until they are fluffy and pale. On a low speed, slowly add the icing sugar 1 tablespoon at a time until completely mixed in. It will seem like way too much but once mixed in it will even out. When all the icing sugar is mixed, add the lemon juice and mix until the icing is thick, glossy and forms stiff peaks.


This is the glue that will hold your house together! with everything ready all that’s left is to put together and decorate your gingerbread house. Be as creative as you wish and have fun!
